Paleo Sweet Potato Cakes

Ingredients:

  • 1 lb sweet potatoes, quartered

  • 4 slices of bacon, chopped

  • 3 green onions, sliced thinly

  • 1 egg

  • Sea salt

  • Black pepper

  • Coconut Oil

Instructions:

  1. Boil the sweet potatoes in a large saucepan; then lower the heat and let simmer until fork tender, approx 7-9 minutes.

  2. While potatoes are cooking, fry the bacon in a skillet placed over medium-high heat until crispy. Set aside.  (yes, microwave is an option!)  Crush/chop bacon when cool.

  3. Smash the potatoes in a large bowl. Add  bacon, onions and egg. Season to taste with salt and pepper.

  4. Form patties with mixture...makes about 4, so quarter it. 

  5. In a large skillet, over medium-high heat, melt coconut oil (approx 1 tbs) and fry the potato cakes until the outsides are golden and the insides are heated through, about 4 minutes per side.

  6. Enjoy!
