Garden Fresh Frittata

Ingredients:

  • 1 cup zucchini

  • 1 cup red pepper

  • 1 cup mushrooms

  • 1 cup spinach

  • 1/4 cup chopped yellow onion

  • 1/4 cup cheese of choice: cheddar, parmesan, goat, etc… plus 2 tbs for serving

  • 1/2 cup chopped herbs, 1/4 for batter, 1/4 for serving

  • Approx. 10 cherry tomatoes

  • sliced 1 lb sausage

  • 18 eggs

  • 1 tsp sea salt

  • 2 tsp seasoning of choice (I use 21 seasoning salute from trader joes)

  • Makes approx. 20 muffins or 2 standard size pies

Directions:

  1. Brown the sausage in coconut oil while whisking eggs in a large bowl

  2. Add salt to eggs, allow to sit while moving on to the next step

  3. Remove sausage from heat

  4. Add veggies (except spinach-keep fresh), mushrooms first to a pan with 1 tbs coconut oil and seasoning; allow mushrooms to cook partially, then add other veggies; cook until tender

  5. Add cooked veggies, sausage, and fresh herbs and spinach to eggs; stir to combine

  6. Add cheese; stir to combine

  7. Prepare muffin tins or pie plates by coating with butter or coconut oil

  8. Pour mixture in, approx 2/3 full Add 1-2 slices of cherry tomatoes to the top of each muffin, or sprinkle across the pie.

  9. Bake until cooked through- use a fork, toothpick or knife to check for solid centers- approx 20

    minutes, but keep an eye on them!

  10. Allow to cool; slide a knife around each muffin/pie to ensure it separates from the side of the pans. Serve with fresh herbs and extra cheese sprinkled on top!
