Chocolate Coconut Balls

Ingredients:

  • 1 cup shredded, unsweetened coconut

  • 1/4 cup coconut oil

  • 1/3 cup cocoa powder

  • 2 tablespoons pure maple syrup

  • 1/2 teaspoon vanilla

  • 1/4 cup chocolate chips

Combine everything in a food processor and blend until well incorporated.   Line a bowl or dish with parchment paper.   Use a spoon and your hands to form balls from the mixture and place in the bowl. Refrigerate for a minimum of 15 minutes and then....
