Asian Turkey Meatballs

Ingredients:

  • 1 lb ground turkey meat

  • 1 small onion

  • 1/2 red pepper

  • 1 tsp sea salt

  • 2 TBS coconut aminos or liquid aminos

  • drizzle of honey 

  • 1 TBS sesame seeds or hemp seeds

  • 1 TBS fresh parsley 

  • *optional- fresh grated ginger

  • 2 TBS coconut oil

Directions:

Dice onion and pepper and combine with ground turkey in a bowl.

Add sea salt, aminos, honey, seeds and combine using your hands (be careful not to over combine or mush!)

Chop parsley and add, combining.

Heat coconut oil in a skillet (cast iron ideal) and form meatballs to your size preference (I usually do 1-2 inches in diameter), adding each meatball to the hot oil in the skillet.  Allow the meat balls to brown, turning to affect all sides.  It's ok if your meatballs do not stay perfectly round!

While the meat balls are browning, melt 1 TBS of coconut oil in a baking dish and heat the oven to 350-375 degrees.  As meatballs are browned, add them to the baking dish, and bake for approximately 20 minutes to ensure they are cooked all the way through. 

Serving suggestions:  Over zoodles or spaghetti squash, with a drizzle of Sriracha!  Alongside sauteed peppers and onions or even beside fresh pepper spears as a party appetizer!  Mix lime juice with some greek yogurt , parsley and honey for a fresh dip!
